Ingredients:

  • 1 cup Basmati rice
  • 1 large chicken breast, cut into small pieces
  • 2 medium onions, sliced
  • 2 medium tomatoes, chopped
  • 1 inch piece ginger, grated
  • 3 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • 2 tablespoons oil
  • 2 cups water
  • Fresh cilantro, chopped (optional)

Instructions:

  1. Rinse the Basmati rice in cold water and set aside.

  2. In a large saucepan, heat the oil over medium heat. Add the cumin seeds and wait until they start to sizzle.

  3. Add the sliced onions and cook until they are soft and golden brown.

  4. Add the grated ginger and minced garlic and cook for 2 minutes, stirring frequently.

  5. Add the chopped tomatoes and cook for another 2 minutes until they are soft and mushy.

  6. Add the chicken pieces and cook for 5-7 minutes until they are browned on all sides.

  7. Add the coriander powder, turmeric powder, red chili powder, garam masala, and salt, and cook for 2 minutes, stirring constantly.

  8. Add the drained Basmati rice and 2 cups of water. Stir well to combine.

  9. Bring the mixture to a boil, then reduce the heat to low, cover the saucepan with a lid, and simmer for 20 minutes.

  10. After 20 minutes, turn off the heat and let the chicken pulao sit for 10 minutes, covered.

  11. Fluff the chicken pulao with a fork and serve hot, garnished with fresh cilantro.
